Here is the rest of my efforts from yesterdays cook-a-thon.
Nutella brownies - I followed the recipe for this exactly. I know that using box brownie mix is cheating but I don’t give a damn. The nutella/cool whip topping is absolutely sinful.
Stuffed bell peppers - I used this recipe as a guide, changing quite a bit of it. I used quinoa instead of rice, put the topping into the mixture instead of on top (using tomato sauce instead of ketchup), and topped them with cheese about 5 minutes before I took them out of the oven. As with a lot of things, these were much better today for lunch after all of the flavors had time to settle. I love recipes like this where you don’t have to follow them exactly, using whatever you have on hand or think will taste good. I want to make a big batch of these soon and freeze them individually for a quick dinner or lunch at school.
